Guacamole

Ingredients
3 Haas avocados, halved, seeded and peeled
Juice from 1 lime
½ teaspoon salt or to taste
½ teaspoon ground cumin
½ medium onion, diced
2 tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

Directions
1. In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain and reserve the lime juice after all of the avocados have been coated. Add the salt and cumin. Then mash with a potato masher.
2. Fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice.
3. Lit sit at room temperature for 1 hour then serve.

Quick Black Bean Burgers

Quick Black Bean Burgers

Ingredients:
2 cups cooked black beans
½ cup bean water
1 tablespoon onion powder
1 tablespoon garlic powder
1 ½ teaspoon salt, or to taste
2 teaspoons cumin powder
2 teaspoons dried basil
2 tablespoons olive oil
1 cup grounded oatmeal (adjust if necessary, mix should be stiff, like a very soft sticky dough)

Directions
1. Mash beans with fork or potato masher. Add remaining ingredients and mix well.
2. Form into patties,
3. Bake at 350 degrees for 30 – 35 minutes. Flip halfway through.
*May cook on electric skillet instead of baking in oven*

Crockpot Beans

Crockpot Beans

Ingredients:
5 ½ cups water
2 cups pinto, black, garbanzo or small red beans
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon dried Basil
2 teaspoons sea salt, or to taste
1/2 teaspoon cumin powder
1 onion diced
6 cloves of garlic (or as many as you like)
Fresh Cilantro to taste (Optional)

Directions
1. Place first 7 ingredients in a crock pot and cook for 6 – 8 hours.
2. Add fresh onion and garlic after first two to three hours of cooking.
If you prefer to cook this on the stove, add seasonings once beans are cooked

Granola

Granola

Ingredients:
3 ripe bananas
1 cup pitted dates
3/4 cup water
6 cups old fashioned rolled oats
1 ¼ tsp salt
1 cup sliced almonds
1 cup unsweetened coconut flakes
1 cup raisins

Directions
1. Heat dates and water together. Then Blend until smooth in blender with bananas and salt.
2. Combine remaining ingredients in a large bowl. Add blended mixture and using plastic gloves mix well with hands. It should stick together when grabbed by the handful.
3. Bake on 2 non-stick cookie sheets in the oven on 200 degrees for 3 hours or until desire texture. Stir every 30 minutes.

Almond Milk

Almond Milk

Ingredients:
4 cups water
2/3 cup rinsed almonds
4 pitted dates
¼ tsp salt
½ tsp lemon juice

Directions
1. Place nuts, dates, and salt in blender with 1 cup of water, and blend until smooth.
2. Add remaining water and blend again. You may strain milk or use as is.
